Onions. Planting our onions today. We have white a Onions. Planting our onions today. We have white and yellow sets, and we are planting them about 2 inches apart in rows. We are only planting 100 sets this year, and hoping that it won’t be as rainy this spring as last year. 

Having a perfect garden is impossible when gardening with kids, but man isn’t it fun watching them learn, getting their hands (and ever nook and cranny) dirty,  and being little mimics. I Love my little garden helpers more than picture perfect gardens.

Cabbage. Time to plant cabbage seedlings outdoors. Cabbage. Time to plant cabbage seedlings outdoors. It’s important to always water in your seedlings. Try not to get water on the leaves as water droplets are like little magnifying glasses that concentrate the sun on the leaves and burns them. I also like to incorporate a little organic fertilizer into the soil before filling in the hole especially with cabbage because they are heavy nutrient feeders. 

It’s also ideal to plant on a cloudy day when the soil is moist but not soggy. Today the soil isn’t very moist but it’ll be ok.

Easter egg snack board. With inspiration from @mrs Easter egg snack board. With inspiration from @mrsblinks we made a new #eastertradition.

After the Easter egg hunt the plastic eggs normally get packed away for next year. Not this time, we used them as cute serving size snack containers. 

Our family goes through eggs like crazy, so we are not lacking egg cartons. We used a large carton for the board and a normal dozen egg carton for our plates. So fun!

Rosemary. It’s a herb that’s fairly easy to gr Rosemary. It’s a herb that’s fairly easy to grow and propagate. It’s also very versatile in recipes like Farinata from Italy. 

Recipe:
4 cups warm water
3 cups chickpea flour
2 tsps salt
2 tsp finely chopped fresh rosemary 
1 thinly sliced onion
1/2 cup + 2 Tbsp olive oil, divided

Mix water, chickpea flour and salt together and set aside for 30 mins to 2 hours. 
In the meantime, sauté onions with the rosemary in a Tbsp of olive oil. Cook until browned. 
Preheat oven to 400F and place 2 10-inch cast iron pans in oven. 

Add chickpea flour mixture to onions, and add 1/2 cup olive oil. Mix. 

Carefully take out cast iron pans from the oven, coat the bottom of the pans with olive oil, and pour the batter evenly between the 2 pans. Put back in the oven and bake for 20 mins. Then broil for 5 mins until the edges are crispy. Slice and serve warm. 

I topped mine with poached eggs and garlic aioli, and a side of steamed broccoli and romanesco, but it could be a good base for pizza toppings too. (I forgot to take a picture of the final dish because my kids ate it up too quickly). 

I learned this from a dear friend, @archistrati, in Italy. It’s incredibly easy and versatile. 

I’ll post more about propagating rosemary later on this season.

Tomatoes. Time to start those beauties indoors if Tomatoes. Time to start those beauties indoors if you live in #zone6. As I’m planting my collection of seeds that have been given to me, purchased, or I seed saved, I reflect on last year’s harvest. Tomatoes are the star of my garden. I grow more of them then anything else. They are so versatile, my kids love them, and the colors are just amazing. 

What tomato varieties do you like best? Last year my favorite was Santa Maria. A paste tomato. The flavor was sweet and lightly acidic. Very meaty and perfect for sauce making.

Time to plant outside! Yay! We rotated our compost Time to plant outside! Yay! We rotated our compost bin, prepped our beds, setup our low tunnels, and actually planted some seeds outside today! We planted peas, carrots, lettuces, kale, spinach and radishes. 

We’ll cover the low tunnels with just a light row cover this week because it’s going to be warm, but it’ll be ready to put plastic on the tunnel if it dips into freezing again.

Seed starting. Today was a big seed starting day. Seed starting. Today was a big seed starting day. We started tomatillos (need to plant 2 varieties for them to produce fruit), peppers, broccoli, cauliflower, cabbage, ground cherries, eggplant, okra, and marigolds. I don’t recommend starting your seeds this early if you don’t have a good indoor growing station or green house. Everything will get really leggy. 

I normally don’t start all of these things until 2 more weeks, but I’m trying something new since I now have a better setup for my growing station. I also have bigger pots that I can repot the seedlings once they become too big for the smaller pots before going outside. This will allow for the plants to get a head start and be stronger. 

Little tip, sanitize and wash your pots before using them again to make sure they don’t have any fungus from last year. 

I can’t wait for spring! I have such good helpers (ha helping/playing? Same thing right?)

Ginger. Right before we had a frost, we took in ou Ginger. Right before we had a frost, we took in our ginger plant and stopped watering it. Once all of the leaves turned yellow and crinkly, we harvested the ginger roots. From the ginger we made candied ginger which is a spicy delicious treat, and also good in scones, on top of roasted squash or carrots, or in oatmeal. 

We saved back two roots with long tap roots (last picture) and planted those back in the large pot about 1-2 inches below the top of the soil for storage until now.  Now it’s time to give the soil some organic fertilizer and start watering again. As soon as there’s no risk of frost we’ll put the pot back outside where it will get sun in the morning and shade in the afternoon to grow more ginger for this year.
